This is one meal that allows you spice up your sweet potatoes. The entirely different taste and texture leaves you longing for more. Sweet potato is a great alternative to yam. It is fibre-filled and filling! Whip this up for the family today.
Ingredients
5 pcs sweet potatoes
4 tsps butter unsalted
5 pcs bacon
1 cupwhipping cream
1 pc onions
1 pc egg
1 tsp black pepper
1 tsp dried ground pepper
4 tbsps bread crumbs
4 tbsps cinnamon
1 cup cheese (parmesan cheese)
1 tsp rosemary seasoning
1 tsp thyme
1 tbsp salt
Method
Bake the sweet potatoes and allow to cool. Remove the skin and mash the pulp with a spoon.
Cook bacon in a nonstick frying pan. Remove, mash and set aside.
Pour off the bacon grease leaving only 1½ tablespoon bacon grease in the pan. Cook onions in the bacon grease for about 10 minutes. Add rosemary and thyme and remove from heat.
Measure 5 cups of the mashed pulp and put in a mixing bowl. Add 2 tablespoons butter, 1 lightly beaten egg, 1/3 cup cream, salt, pepper and black pepper and beat until smooth.
Add the onion mixture, 1½ cup of cheese and half the crumbled bacon to the mixing bowl and mix properly. Melt 2 tablespoons of butter and set aside.
Transfer the mixture to a lightly tossed casserole. Toss together with melted butter, bread crumbs and pecans.
Top the casserole with the remaining cheese and bread crumb mixture. Bake at 350°F for about 30 minutes, until bread crumbs turn brown.
Serve with the remaining bacon.
